How to cook tom yum (4 servings)
Bring 1 litre of water or stock to the boil, add the dried herbs, simmer 3–5 minutes. Stir in the paste (all of it for spicy, half for mild). Add 300 g shrimp or chicken, 200 g mushrooms, a tomato; simmer 5 minutes. Take off the heat, add lime juice (2–3 tbsp) and fish sauce to taste, then coriander. For the creamy "tom yum nam khon" version — 100 ml coconut milk or a spoon of evaporated milk.

How spicy is it?
With the full amount of paste — medium by Thai standards, noticeably hot by European ones. Half the paste gives a mild version.
How is it different from tom yum paste in a jar?
The kit includes dried herbs — galangal, lemongrass, kaffir lime — which give the aroma of real soup; paste alone cannot do that.
Do I need anything else?
Stock or water, shrimp or chicken, mushrooms, lime. Coconut milk is optional for the creamy version.
